Mardi Gras Shrimp & Grits

Shrimp and grits is a very old but still very popular dish that’s sure to bring all that southern flavor right to your very own kitchen. The meal is simple and the ingredients are common ones you can find at any local grocery store. While living in North Carolina I was introducted to shrimp and grits, and it is a family favorite now. The smells bring me right back to our favorite memories as a family there and I will always love my time back east and treasure the memories and friendships that were made.

Recipe:

INGREDIENTS (Serves 4):

  • (1) Cup Quaker Quick 5-minute Grits (You can find grits in the cereal aisle).

  • (1) Lemon

  • (1) Bag Tail off Pre-cooked Shrimp (Costco Shrimp is my favorite).

  • (1) Cup of Shredded Sharp Cheddar Cheese

  • (1) Bunch of Green Onions, cut in pieces

  • (1) Bag of Bacon torn into pieces.

  • Pinch of Salt

  • (4) Cups Milk

DIRECTIONS : Boil four cups of milk on stove-top, slowly stir in grits, salt, and shredded cheese. Turn down stove-top to low and let simmer for six minutes. While grits are cooking, I prepare my bacon on a skillet. Once grits are finished, I scoop one cup of grits and top with bacon, shrimp, green onions, and fresh lemon for those wanting a little zest. To go with shrimp and grits I used Pillsbury Croissants and knotted them instead of rolling, and served with fresh berries and jam! I hope you enjoy some Southern Cooking!
